Ingredienti per 4 persone:
gr. 800 di filettone salted cod;
1 beer, 330 ml.;
100 grams of flour and semolina;
300 gr. of extra virgin olive oil;
6 ice cubes
Preparation:
Cut the cod into large pieces and clean running water, then place in a container and cover with water. Change the water twice a day for three days.
When the cod is ready to be fried, prepare the batter by mixing the flour with the beer, after which add the ice cubes.
Pass the pieces of cod nella pastella e friggerli nell'olio che avrete preventivamente portato a idonea temperatura (quando inizia a vedersi il fumo).
